carrot fries anyone?

wow, what i a ridiculously long week. i am so exhausted it is ridiculous. today i think i fell asleep in all of my classes unfortunately AND it was super awkward because i was making the face.you know, the face that you make when your about to fall asleep but your really trying not.  with your eyes half closed and your mouth agape and then you start swaying side to side...needless to say i had a lot of laughs at my dispense today.

but that got better when i got home and made this!
chocolate covered katie vegan pumpkin coffee! except i made my coffee iced since its about 80 degrees here!
its so odd, considering tomorrow is the first of October, but I'm not complaining.

after that i went on to make CARROT FRIES!

Carrot fries
  • 1-2 big carrots, 
  • 1 tsp allspice
  • 1 tsp garlic powder
  • non stick cooking spray
cut the carrots in half and then own the middle. from there, begin cutting carrots into little strips. don't make them too thick.
from there place salt, garlic powder, all spice, and carrots into a plastic bag and shake. (if you want, omit the spray and just use olive oil)
place fries on cooking tray, and try and cover them with the non stick spray
set oven to bake at 375 degrees.
bake for about 10 to 20 minutes depending on desired crispiness.

for 1 carrot and no olive oil, the recipe comes out to 35 calories

pumpkin pie for breakfast?!!

PUMPKIN PIE OATMEAL?!
wow. just wow. and its vegan!

i woke up around 4:30 this morning since i have a hard time sleeping so i was feeling pretty low so i needed some sort of pick me up for breakfast which included a HUGE delicious peach and my new masterpiece, the pumpkin pie oatmeal
pumpkin pie oatmeal recipe:
  • 1/2 a cup of uncooked oats, (i use a packet of oats with flax)
  • 2/3 cups of almond milk ( i add a tsp of water along with this, i like my oatmeal soupy)
  • 1/4 teaspoon of vanilla extract
  • sweetener ( i use 3 equal packets)
  • 1/8 tsp of pumpkin spice
  • 1/8 tsp of cinnamon
  • 1 tbsp + 1 tsp pumpkin puree
  • 1 tbsp tofutti cream cheese


you can cook this according to how you like your oatmeal, i put mine in for about 2 minutes usually but for this i put it in for 2 minutes and 30 seconds

the thing about this oatmeal, compared to other pumpkin pie vegan oatmeal is the cream cheese, it defnitley adds a more creamy pie like taste, especially if you let it sit for 5 minutes the texture gets thicker. it really does taste like pumpkin pie and not just pumpkin with some oatmeal!

it was amazing. its such a good way of starting out fall. its vegan, and a very healthy alternative to regular pumpkin pie!
or if you just have a crazy pumpkin craving like i do its a simple quick fix!

easy breakfast quinoa!

i got up early to do my morning workout routine and i really needed an energy boost to start off the day
this is a good recipe if you're bored of you're regular oatmeal,cream of wheat, etc.
SOME BREAKFAST QUINOA
Breakfast quinoa recipe
  • 1/4 cup of quinoa
  • 3/4 cup of almond milk
  • 2 tbsp sugar, or truvia
  • 1/4 tsp of cinnamon
  • a dash of allspice
  • 1/4 tsp of vanilla extract
  • a few drops of almond extract
put all items into a small pot, mix together, you want to put on a really low heating setting so it can simmer. DONT FORGET to keep stirring it, or it will get stuck to the pan. cook it until most of the liquid has been absorbed by the quinoa

serve and enjoy!

i tried baking it but it was a fail....the bananas dried out really fast and started burning in the middle inside out....
OH WELL.

HERE is my dinner, i have discovered a new protein love next to tofu and it is called:
SEITAN!
i just bought a box of it and oh.my.god.

i cooked it in soy sauce with some sugar in it with onions an garlic.
i served it on a side of steamed veggies,  roasted potato, and a side salad of cucumber and peppers with italian light dressing
oh my god it was so good!

all about breakfast

breakfast in my opinion, is the most important meal of the day, but not many people eat it. studies show that only 15% of people ACTUALLY sit down and eat breakfast?
 to me this is just madness. i can't imagine what life would be like without it!
my favorite cereal with bananas and coconut shreds!

egg white omelet with veggies and a banana!
 greek yogurt with irish bread and apple slices!
 simple tofu scramble!
 berry fusion oatmeal with green tea!
 pumpkin banana almond oatmeal!

and last but not least is a veggie egg white microwavable egg mug


so, those were some simple breakfast ideas for people who dont eat breakfast BUT SHOULD

in the afternoon of the indian summer

hurrah to the second day of fall!
for some reason, in new England where i live its going to be extremely hot this week. lie 70 degrees to 80 degrees.
But you know what they say: "welcome to new England, if you don't like the weather, wait 5 minutes. it will probably change"
i came home from my friends party and i was feeling super tired, which is odd since i spent most of the night like this

(i hate my friends)

so i got home and immediately needed toe at breakfast, which happened to be chock full of protein 
Greek yogurt with Irish bread and apple slices :)
it was amazingly delicious.

my sister and her boyfriend went apple picking and brought home  TON OF APPLES
and made this:
their very own VEGAN APPLE CRISP they combined a bunch of recipes they found online and made they're very own :)
so proud!

this is my dinner :

i was feeling lazy so i just steamed some tofu and vegetables with whole grain pasta and soy sauce
with roasted sweet potatoes : )
sadly no recipe today but soon!

question: how crazy do you get when you go to a party?
I'm usually the kid who falls asleep around 8 and i love my alone time, but parties are always nice.

super simple 1-2-3 raw brownie bites!

Hello!
i've been really busy lately running between school, cooking and the musical so im just glad the weekend is here for some good fun.

this mornig i was really lazy so i just ha cereal with almonds :)

i love eating out of mugs, i have no idea why this is.


ON TO MY RAW BROWNIE RECIPE!

Raw Brownie bites:
 1 cup of chopped almonds
2.  1 cup medjool dates
3. 1/4 cup cocoa powder

place all of items in a food proccesor and pulse until smooth, from there just turn it on and let it ball up

this is what it should look like when you know its done

scoop out of food proccesor, and stick in a tray for your fridge
you should probably let them firm up for about 3 hours
and here is the finished product!


so there you go! i was really happy how simple and easy these were to make and how absolutley delicious it was to eat! with only 3 ingredients!
so now, im bringing these to my friends birthday party, HOPEFULLY everyone will like them

tofu bake and charmed

hey everyone!

its 6 o clock, I'm about to head out to rehearsal,
but of course i got distracted since the first episode of charmed is on right now.

this really was a great show. i really miss it being on, along with Buffy the vampire slayer.

what shows o you wish were on TV still?

i started my morning off with a fall inspire breakfast,
Pumpkin banana almond oatmeal



It was really good, but oatmeal never fills me up. how unfortunate :(


later that evening i decided to get tricky in the kitchen,
and i made a simple marinated baked tofu


with this marinade


(its really spicy so it was meh. but i added a little bit of sugar, with soy sauce and balsamic vinegar.)
i baked it for about an hour at 375 degrees


and served it on top of brown rice, spinach and steamed vegetables.



catherine, on the other had ate some teeth for dinner...
my sister is so weird.
my mom went to the dentist today and found out she had to get one of her teeth pulled! when the dentist went to throw it away she said no! let me keep it! my children will love it!

Tuesday's tofu scramble :)

i didn't post yesterday because i was so busy!
i woke up yesterday to do my morning workout, and for a quick breakfest a whey protein shake, and oatmeal. well i had a good workout but an hour later i broke out into hives!

can you believe that? my neck and my face were all swollen and itchy. it was terrible. anyway these whey protein shakes are something very new to me, as of yesterday i've only had 3 in about a months time. so i'm pretty sure im allergic to whey!

how wierd is that? it makes so much sense though, i have had stomach issues since i was little, food would just go right through me. so now we have some idea as to why. its a very long and complicated list of trigger foods which is why i am so annoying about what i eat.

THAT BEING SAID
on to todays recipe!


Tofu scramble:
½ a block of firm tofu (I use lite from silken)
1 tablespoon of apple cider vinegar
1-2 tablespoons of soy sauce light in sodium
2 tablespoon nutritional yeast             
½ teaspoon of tumeric
2 slices of tomato sliced and cut into cubes
2 diced pieces of garlic
At least a handful of onions chopped (I used the frozen kind since I was in a hurry)
5 slices of zucchini cut up into cubes
A few (2-3) broccoli florets.
2 tablespoons of water
1/4teaspoon cumin
A sprinkling of crushed rosemary
And to finish it off, some grated carrots!

Cook the tofu by crumbling it with your hands with the vegetables in a pan, when starting cooking about 5 minutes in add in apple cider vinegar and just let that sit and cook. in another bowl, mix the water, the soysauce, nutritional yeast, tumeric, and cumin and water. feel free to add more water but it should make a very thick sauce.

stir into the tofu slowly and try not to concentrate into one spot. it may be very wet with a lot of excess so only pour the amount that you feel is right for you.
i like mine dripping with seasoning!

Boston sunday brunch

wow, what a looooong day.
literally. i woke up at 12 am and I've been awake since! its about 7:24 pm. i feel awful, I've been taking 5 minute snoozes since i woke up.

so, this morning since i was up AT 5 AM i decided to make my breakfast

it was extremely tasty just exscuse the bad lighting, it was still dark out.
my oatmeal consisted of
steal cut oats
almond milk
blueberrries
strawberries
equal
bananas
cinnamon
and vanilla extract

ireally like this oatmeal, i feel like steel cut fills me up way more than instant oats, which we are now FILTHY with in my home. they were on sale so we now about about 8 different boxes of oatmeal :)

sunday was such a day of procrastination for me. i shouldve worked on my homework more consistently, i just dont get what im doing with my physics work :/

on to my second half of the day starting with my beautiful lunch!
the bits of white are egg whites!



then i went into Boston to visit my friend Margaret who has just started college , and we HAD to get something to eat seeing as how we were in Harvard square.
we decided on veggie planet

Margaret and Catherine both got the open face grilled cheese pizza sandwich. i loved their ordering style at the restaurant, what they do is they have certain dishes of vegetables and you have your choice of putting it into an omelet, pizza dough, brown rice, or coconut rice! and they are incredibly vegan friendly and organic!

first post jitters! welcome to the blog!



+Or should i say welcome to  myself?


i am a high school student in my late teens who has been a vegetarian the past year, and a vegan for six months. but for now, I'm back to being veg :)

for my first post ever I'm going to talk about something very important: protein
for vegetarians an vegans, protein is essential, but because you don't eat meat, or animal products, it may be hard to get that important protein.


so, one of my favorite sources of protein is:

chobani yogurt, has up to 18 grams of protein with only 7 grams of sugar.

now, i like the plain flavor BECAUSE  i do not like the flavored kind of yogurt. it has INSANE amounts of sugar in them. next time you go to the grocery store, take a look at the nutrition facts on the other Greek yogurts from chobani yogurt. they can have up to 19 grams of sugar in them. 
i prefer to make my own little yogurt concoctions because the plain doesn't taste very good.




here are some of my favorite yogurt ideas

  • i add 4 packets of equal, with 1/4 teaspoon of vanilla extract and a sprinkle of cinnamon
  • maple syrup with 1/4 cup of fiber one cereal, to add some fiber to it!
  • fruit! cut up any kind of fruit you want and just throw it in!
  • this is a new one i just recently picked up fromundressedskeleton on tumblr where you put sugar free jello mix into it! its so delicious




so, yeah there's my first blog post with hopefully many more to come! i really want to document my healthy eating over the next year, along with how busy I'll be due to school and college searching. wish me luck!
